Thirteen Meals I'm Planning for May

31 day challenge

As part of our "3 Moms, 3 Kitchens, 31 Days" adventure, I've planned out 13 meals which I plan to make during May. So here's what's on our dinner menu—in no particular order:

  1. Chicken/Rice/Veggie casserole
  2. Chicken spaghetti (I haven't found a recipe for the spaghetti yet. Anyone have a great recipe they'd like to share?), peas and homemade garlic bread
  3. "Wet" burritos (I'd never heard of this before Toni suggested it after looking at a picture of my pantry.), corn, and Spanish rice
  4. Baked potatoes with all the fixings
  5. Oven baked chicken, potato wedges, and green beans
  6. Lasagna (Joely made this as one of her Saturday meals a few weeks ago. It was SO good!), corn, and garlic French bread
  7. Baked rotini (Thanks to Toni for this one, again.), green beans, and bread
  8. Taco salad and corn
  9. Meatloaf, peas, and mashed potatoes
  10. BBQ slow-cooker chicken, baked beans, cornbread, and green beans
  11. Chicken taco soup
  12. Homemade pizza
  13. I'm actually only planning 12 meals for May. The rest of the time we'll YO-YO, which means "You're On Your Own" (in other words, everyone makes dinner for themselves, like fried eggs, sandwiches, oatmeal, etc.)

    INGREDIENTS

    1 (16 ounce) package spaghetti, cooked and drained

    1 (10.75 ounce) can condensed cream of chicken soup

    1 (10.75 ounce) can condensed cream of mushroom soup

    1 (14.5 ounce) can diced tomatoes with green chili peppers

    8 ounces processed cheese food

    4 skinless, boneless chicken breast halves – boiled and cut into bite-size pieces

    DIRECTIONS

    Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente; drain and set aside.

    Put chicken soup, mushroom soup, tomatoes with green chili peppers and cheese in slow cooker over medium heat. Stir together and cook until cheese has melted.

    Stir cooked chicken and spaghetti into cheese mixture and heat through. Reduce heat to medium low and cook for about 40 minutes.
