I've been trying to do a lot more baking lately, and I've had several of my blogging friends recommend recipes for me to try. So for today's T13, I thought I'd post 13 of the recipes I've collected over the past several days (as well as a couple oldies) that I've either made or plan to make soon.
1. Chocolate Chip Muffins #1: Toni, The Happy Housewife, was kind enough to email me three recipes for chocolate chip muffins, and I made one of recipes tonight. I used to buy Betty Crocker chocolate chip muffin mixes, and they tasted very good, but I would say that this recipe was just as good.
Chocolate Chip Muffins
- 1 3/4 cups all-purpose flour
- 1/3 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 beaten egg
- 3/4 cup milk
- 1/4 cup applesauce (or cooking oil)
- chocolate chips
Mix together, add chocolate chips, bake at 375 for 10-12 minutes.
2. Chocolate Chip Muffins #2. This is a whole wheat recipe, also from Toni.
Whole Wheat Chocolate Chip Muffins
- 2 1/4 cups whole wheat flour (or half white/half wheat)
- 1 tsp salt
- 1 tsp soda
- 1 tsp baking powder
- 1 cup buttermilk
- 1 egg
- 1/2 cup oil
- 1/2 cup honey
- chocolate chips
Mix dry ingredients, then add liquid ingredients and stir just until the mix
is moist. Add chocolate chips. Bake at 375 for about 12-15 minutes.
3. Chocolate Chip Muffins #3. Yet another great recipe from Toni. She says that this is her kids' favorite.
Chocolate Chip & Cinnamon Muffins
- 2 1/4 cups flour (wheat/white or combination)
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 cup buttermilk
- 1/2 cup oil
- 1 egg
- 1 cup chocolate chips (more or less depending on preference)
Preheat oven to 400 degrees. I mix all the ingredients together except
chocolate chips until well mixed and then blend in chocolate chips. Fill
muffin tin(s) and bake for about 12-15 minutes or until golden brown. I do
spray a bit of Pam or something in the tins to ensure the muffins do not
stick or use muffin cups.
4. Big Daddy Biscuits. I got this one from Jenny over at Runningamuck. I haven't made them yet, but I'm planning them for breakfast in the morning!
Big Daddy Biscuits
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1/3 cup shortening
- 1 cup milk (or less)
Mix dry ingredients together. Cut shortening into dry mixture using a pastry cutter until all the shortening is in very small pieces. Add milk. (Jenny puts about 3/4’s in first and then stirs a bit to see if she needs the whole cup or not). You can mix this pretty thoroughly, just don’t beat it to death as that tends to “kill” the baking powder and its ability to make the biscuits nice and tall. Flatten out with hands and cut into biscuit shapes with a large cup or mug. Place on ungreased cookie sheet and bake for 10 -15 minutes at 425 degrees. Makes 6 large biscuits.
5. Soft Italian Breadsticks. Mom Loves Being At Home calls these breadsticks "amazing!" I haven't made this recipe yet, but it is definitely on the docket for the next week.
Soft Italian Breadsticks
- 1 cup water
- 3 T softened butter
- 1 1/2 tsp salt
- 3 cups flour
- 2 T sugar
- 1 tsp Italian seasoning
- 1 tsp garlic powder (or garlic salt)
- 2 1/4 tsp yeast
Use the dough setting on your bread machine. Add all ingredients in order and start. (If mixing by hand, simply prepare the dough as you normally would.) After dough is finished, cut in half and divide each half into 12 pieces – roll into a long rope or cut into strips. (I roll it out and then just use a pizza cutter and cut strips.) Cover with plastic wrap and let rise for 20 minutes. Bake at 350 degrees for 15-18 minutes. Brush with melted butter and sprinkle with parmesan cheese.
6. Cinnamon Rolls.This recipe is from Kate at A Simple Walk.
Cinnamon Rolls
- 1 T yeast
- 1 cup water
- 1/2 cup white sugar
- 1/2 cup melted butter
- 1 tsp salt
- 2 eggs
- 1 T dry milk powder
- 4 cups white flour
ICING:
- 1/2 cup softened butter
- 1 1/2 cup powdered sugar
- 1 oz. cream cheese
- 2 T water
- 1 tsp vanilla
Mix all ingredients together, but don't add all flour at once, add slowly. Knead into a ball, divide into 2 pieces. Roll out both pieces into large rectangles and spread with: 1/4 c. softened butter, 1 C. brown sugar and 3 T. cinnamon. Roll up and cut into rounds. Bake at 400 for 10 minutes or so (might take a little longer – mine took about 15 minutes). Drizzle with the icing.
7. Honey Whole Wheat Bread. This recipe was also recommended by Kate. She got the recipe from Heavenly Homemakers. (See the original recipe here.)
Honey Whole Wheat Bread
- 6 cups whole wheat flour, divided
- 1 ¾ cups warm water, divided
- 1/3 cup honey
- 1 pkg. yeast
- 1 tsp salt
- 3 T melted butter
- Mix 3 cups of whole wheat flour with 1 ½ cups of warm water in a large glass bowl. Allow this to sit for about 30 minutes. This will break down the gluten and help the bread to rise better.
- Meanwhile, in a small bowl mix together ¼ cup water, yeast and honey. Allow this to sit for about 10 minutes, or until the yeast is activated and mixture becomes bubbly.
- Add salt, melted butter and yeast mixture to the flour and water mixture. Gradually add the remaining three cups of flour and stir well.
- As the dough becomes harder to stir, pour it out onto a clean counter and begin to knead the dough. Add a little flour if needed to keep it from sticking. Knead the dough for 5-10 minutes.
- Place the ball of dough back into the bowl and cover it with a cloth. Allow the dough to rise for one hour, or until it has double in size.
- Using a floured hand, pull the dough out of the bowl onto the counter. Knead for just a minute or two until the air bubbles are gone.
- Cut the dough in half with a large sharp knife.
- Shape each section of dough into a loaf and place them each in a buttered bread pan. Cover and allow 45 minutes to one hour to rise again.
- Bake in a 350 degree oven for 50 minutes, or until the bread sounds hollow when you thump the top of it. Allow the bread to cool for 10 minutes, and then remove it to finish cooling on a wire rack.
8. Baked Oatmeal. I found this recipe on Gray Matters' blog. This is yet another recipe I haven't gotten around to cooking yet, but I've seen this on so many bloggers' breakfast menus, that I think I just might be missing out on something.
Baked Oatmeal
Mix together
- 1/2 Cup butter, melted
- 1 Cup brown sugar (I used less)
- 2 eggs, beaten
Add:
- 3 cups rolled oats
- dash (or two) of cinnamon
- 2 tsp baking powder
- 1 tsp. salt
- 1 cup milk (I diluted my milk with water)
Mix well. Pour into a greased 9×13 baking dish and bake at 350 for 30 minutes.
9. Peanut Butter Munchies. I haven't made this recipe from Genesis of a Cook yet, but it looks so good, I just had to add it to my list!
Peanut Butter Munchies
For Chocolate Dough
- 1 1/2 cup flour
- 1/2 cup cocoa powder
- 1/2 tsp. baking soda
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/4 cup peanut butter
- 1 egg
- 1 tbsp. milk
- 1 tsp. vanilla
For Peanut Butter Filling
- 3/4 cup powdered sugar, sifted
- 1/2 cup peanut butter
- 2 tbsp. white sugar
- Preheat oven to 350 degrees. In a medium bowl, stir together flour, cocoa powder and baking soda. Set aside.
- In a large mixing bowl, beat together the butter, white sugar, brown sugar and peanut butter with an electric until combined. Add egg, milk and vanilla; Beat well. Beat in as much of the dry ingredients as you can with the mixer. Stir in remaining dry ingredients by hand with a wooden spoon. Form chocolate dough into 32 balls, about 1 1/4 inches in diameter. Set aside.
- For the peanut butter filling, in a medium bowl, combine powdered sugar and peanut butter until smooth. Shape mixture into 32 balls.
- On a work surface, slightly flatten a chocolate dough ball and top with a peanut butter ball. Shape the chocolate dough over the peanut butter ball, completely covering the peanut butter mixture. Roll in a ball. Repeat with the remaining chocolate dough and peanut butter balls.
- Place balls 2 inches apart on an ungreased cookie sheet. Lightly flatten with the bottom of a glass dipped in the 2 tablespoons of white sugar.
- Bake cookies for about 8 minutes or until they're just set and surface is slightly cracked. Let cookie stand for about 1 minute before transferring cookies to a wire rack to cool.
10. Honey Bun Cake. I actually got this recipe off a comment written by Life With Littles on Runningamuck's blog. Haven't tried this one yet either, but I have purchased the cake mix for it.
Honey Bun Cake
Mix together:
- 1 box yellow cake mix
- 4 eggs
- 8 ounces sour cream or yogurt
- 1 cup oil
Mix together:
- 1 cup brown sugar
- 4 tsp cinnamon
Pour half of cake mix mixture into a greased oblong pan. Sprinkle brown sugar and cinnamon mixture evenly over cake. Then pour rest of cake mixture on top and swirl with a knife. Bake 325 degrees for 45 minutes.
ICING:
- 2 cups powder sugar1 teaspoon vanilla3 tablespoons of hot water
Mix ingredients together and pour on cake. You may want to let your cake cool some before you do this step.
11. Homemade Bagels. This is another great recipe from Toni. Check out her post for step-by-step pictures for this recipe.
Homemade Bagels
Ingredients:
- 2 1/4 cup warm water
- 2 Tbs Honey
- 2 1/4 tsp salt
- 5 cups flower (you can use all white, half white/half wheat, or all whole wheat)
- 1 Tbs gluten
- 2 tsp. instant yeast
- Combine water, honey, and salt. Add part of the flour, yeast and gluten, mix well. Continue to add flour until you have a slightly sticky dough, knead for about 10 minutes. Let dough rise until it has doubled.
- After the dough has risen, divide into 11-13 balls. Toni can usually get 13 bagels out of this recipe. This is also the time to add any extras. After the first rise but before you divide your dough, you can mix in onions (for onion bagels), assorted seeds or nuts, cinnamon and sugar, etc.
- After you have divided your dough, take the balls and put your thumbs through the middle of the ball. You will make the bagel shape by doing this. You need to work the hole to a pretty large diameter (almost 2 inches) because the hole will shrink when they rise.
- Allow the bagels to rest (covered) for 20 minutes. It is best if you watch the time on this. You won’t ruin your bagels if they rest for 25 or 30 minutes, but 20 minutes is ideal. While the bagels are resting, start boiling a pot of water on the stove. Add honey or sugar (about 1/3 cup) to the water.
- After the bagels have rested and your water is boiling drop the bagels (one or two at a time depending on how big your pot is) into the boiling water. Boil for one minute. Let me repeat this, boil for one minute. Do not over boil or your bagels will fall apart. You can under boil them, but do not over boil. After a minute remove from the water with a slotted spoon and place on greased cookie sheet.
- After the bagels are boiled you can brush them with an egg wash ( one egg white and about 3 Tbs of water) but it isn’t required. The egg wash gives the bagels that shiny look.
- Bake in a 350 degree oven for about 20 to 30 minutes. You can flip them if you think they are getting too brown on the bottom, but they won’t be as pretty.
12. Peanut Butter/Chocolate Chip Protein Balls. This is my own recipe that I've adapted from various others I've found online.
Peanut Butter/Chocolate Chip Protein Balls
Ingredients:
- 1 cup peanut butter (creamy or crunchy)
- 1 cup powdered milk
- 6 Tablespoons honey (1/4 cup + 1/8 cup=6 Tablespoons)
- 1/2 cup milk chocolate chips (I used regular-sized chips, but mini-chips would probably work better)
- 2 graham crackers, crushed
Directions:
- Mix all the ingredients (except the graham crackers) together in a bowl.
- Form the mixture by hand into 1? balls.
- Roll the balls in the graham cracker crumbs to coat completely.
- Refrigerate or freeze, then enjoy!.
Makes around 2 dozen balls
Alternatives: Roll the balls in powdered sugar or unsweetened cocoa or replace the chocolate chips with raisins.
13. Beef and Cheddar Casserole.This is a recipe Jeff and I conconcted when we were first married. It's not lowfat by any means, but it's easy to make, and it's delicious.
Beef and Cheddar Casserole
- 1 pound ground beef
- 12 oz. egg noodles
- 1 can condensed tomato soup
- 1 can condensed cheddar cheese soup
- 6-8 oz. shredded cheddar cheese
- Cook the noodles according to the package directions. Drain and return the noodles to the pot.
- Brown the ground beef and drain off the grease.
- Mix the tomato soup and cheddar soup into the beef and heat thoroughly.
- Stir the meat mixture into the noodles.
- Pour the noodle and beef mixture into a greased 9 by 13 casserole dish and sprinkle the shredded cheddar cheese over the top.
- Bake in 350 degree oven for 5-10 minutes, or until cheese is completely melted.

Those chocolate peanut butter cookies look so good! I have all the ingredients on hand too. I'm definitely making those tomorrow! And I'm also trying the muffins (not sure which one yet) and the breadsticks, and the bagels! Maybe I'll just try the 11 other ones that weren't from me and leave it at that.
