The Breakfast Challenge: Day Two

100_1398

Breakfast challenge on day two was more of a challenge for me.

This morning I made an oven omelet, a recipe I've never made before. The ingredients were few (just eggs, milk, and cheese…and deli ham for me), the prep was quick and easy, and I especially love that I didn't have to stand over a pan making sure the eggs didn't burn.

I wanted ham in the omelet, but I knew my kids wouldn't, so I chopped up about 6 slices of deli ham and sprinkled it over half the omelet before putting it in the oven to bake. The omelet took 10 minutes longer to bake than I had expected, a total of 30 minutes, but the wait was worth it. It was delicious, especially the crusty edges. My husband and the girls loved it too, so I'll definitely be making this again.

Jaden again opted out of the hot breakfast, choosing cereal instead. But although he didn't eat the oven omelet, he did give it a new, and properly descriptive name — Scrambled Egg Cake. I like the name, so I think that's what we'll call it from now on.

Jaden won't be having cereal tomorrow morning because chocolate buttermilk muffins are on the menu, and he loves those! I'll probably be doubling the recipe and freezing the leftovers so I can pig out on them later this week.

So that's day two! Don't forget to check out what Amanda at Better is Little is doing for her part in this week's Breakfast Challenge.

And if you are up for a challenge, or need some inspiration and motivation to get back in the kitchen and cook, we'd love for you to join us in this adventure. Just focus on making breakfasts every day this week, trying out new recipes or bringing back some oldie-but-goodies. Then next Monday Amanda and I will each host a Mr. Linky and you can link up your post about the breakfasts you tried this week (of course, including pictures and mouth-watering recipes, too!).

For each of the the following three weeks, the challenge will be lunches, dinners, and then snacks. Then, at the end of this 4-week cooking challenge, Amanda and I will be compiling master menu plans from which we can more easily plan our meals. So we're both looking forward to some new meal ideas from our fabulous readers. We'd love for you to join us!

This day two of our breakfast challenge was a winner and our oven omelet was renamed scrambled egg cake.

Thanks for referring this recipe, Joy. We ate the "scrambled egg cake" tonight for supper. Easy and yummy:)
