Menu Plan: Week of December 8

Weekly meal planning

I haven't made a menu plan in a little while. But I figure since we aren't homeschooling in December, I don't have an excuse for not planning and making meals this month. Although my pantry is a little bare at the moment — although I do apparently have a lot of tomato products in the back left corner — and I only have one meal's worth of chicken in the freezer, I think I'll just work on using up what I have on hand before making a big shopping trip. Hmmmm. I wonder how long we'll be able to make it before I just have to go grocery shopping? I'm shooting for Friday.

Here's what I plan to make this week with what I have on hand:

  • Baked beans and creamed corn cornbread (using the recipe by my favorite Food Network chef, Alton Brown)
  • Vegetable stir-fry
  • Chicken taco soup
  • Pita Bread Pizzas

I'd also like to use up those cans of pumpkin I have by giving these recipes a try:

  • Pumpkin pancakes
  • Downeast Maine Pumpkin Bread

And of course, since I'm a devout chocoholic, I definitely have to try this recipe of Kate's:

  • Chocolate Crinkles

    You're going to love that Downeast Maine Pumpkin Bread! I made so many loaves last winter I *almost* got sick of it, but not quite. I plan on making them for gifts this year.

    Good luck stretching your pantry! I'm currently doing the same to see just how long I can hold out before heading to the grocery store.

    I made Kate's delicious Chocolate Crinkles Friday and they were FANTASTIC!! Everyone said they smelt like a chocolate brownie. I will be making them again.

    Your pantry looks similar to mine…a little on the bare side! 🙂 This is my week for trying to stay out of the grocery store and use what I have and see how far it will stretch! I'll have to go to the store though by week's end to get some more meat in the house for this meat & potatoes family of mine. 🙂
