Day 1, Breakfast

31 day challenge

I made biscuits from scratch this morning for my breakfast challenge using Jenny's wonderful recipe. I had hoped to be able to make two batches so I could freeze one, but we had only a tiny bit of milk left in the fridge so I was able to make only one. Of course, after the fact, I realized that I probably could have used the dry milk powder I have in my pantry, but it didn't cross my mind before I made breakfast.

Knowing that I would be posting pictures of our meal, I decided that I'd add a little protein to my meal. I'm usually a big carb-lover, and I don't eat much protein at breakfast, but I figured that adding a little protein couldn't hurt (and my mom would be happy about it!). And since we were out of milk, I had to drink apple juice with my meal instead of my usual, enormous glass of ice-cold skim milk!

The kids didn't want any eggs, so they just had biscuits for breakfast. All carbs, no protein, I know. But at least they had a hot, homemade breakfast (or at least that's what I'm telling myself). I'd have given them bananas if we'd had any, but I won't be going shopping until tomorrow.

    Oh yummy! Looks good 🙂

    I'm always on the lookout for a good biscuit recipe – I just haven't found the right one yet. I may give this one a try. Do you think you could substitute butter for the shortening? Hmmm….
