Another Great Zesty Cook Meal: Almost Chicken Paella

So far, every single one of Zesty Cook's suggested meals has been a hit with our family, and last night's meal of Almost Chicken Paella was no exception.

I will admit that I was not the one who prepared this meal. Instead, I set out the ingredients ahead of time and left the recipe out for my husband to prepare while I taught my last piano lesson of the day. This worked out very well (other than the fact that my student and I could hear the vegetable chopper working overtime during my lesson) and we were sitting down to eat 20 minutes after my students left. Jeff did a fantastic job, and the meal was super-delicious!

The only changes we made to Zesty's recipe were that we used three chicken breasts instead of two, we didn't use any turmeric (I didn't have any on hand),  and we topped each serving with some extra sweet chili sauce. Jeff said that when we make this dish again, he'll probably double or triple the paste from the recipe (sweet chili sauce, red pepper flakes, and paprika) since it seemed like it cooked off so quickly. Even so, the dish turned out to have a fantastic flavor. We will most definitely be making this dish again.
