A Rare Two-Meal Day

I can't remember the last time I prepared two sit-down meals in one day, let alone on a Sunday which is often one of our busiest days. But for some reason we ended up making two full meals today. After the fact we realized that our meals were very representative of our fairly new MediterrAsian diet that we switched to several weeks ago: lunch was stir fry, and dinner was pasta with red pepper pesto and homemade breadsticks.

It's been interesting how the kids have gone from refusing to even try the stir fry to where they are now requesting it. Well, at least two of the three kids do. Joely is still only eating the rice with a little "spray" butter on it, but we're hoping she'll come around to liking it soon.

Jerah even tried the pesto tonight, which is pretty adventurous for her. After taking a good bite of the spaghetti with pesto, she decided it was too "spicy" for her. But then when Jerah said it was spicy, Joely — who loves spicy food — actually decided to give the pesto a try too! <shock!> But, alas, Joely's final verdict was that she didn't like it. She does get kudos for giving it a real try though.

Two meals in one day and even our kids were willing to try them without a lot of encouragement.
