Wet Burritos

Since I went grocery shopping for a few hours in the middle of the day and then taught lessons from 4-5:45 tonight, I didn't think I'd be able to make dinner and have it on the table to eat by six. So Jeff offered to cook dinner. And of course I accepted his offer.

So I wrote out the recipe for "Wet Burritos" that Toni had mentioned to me the other day. Jeff prepared dinner and had it on the table ready to eat as soon as I finished lessons. What an awesome husband!

The burritos turned out delicious! And it couldn't have been easier.

Wet Burritos

Ingredients

  • 2 cans of refried beans
  • 1 chopped onion
  • 1 cup salsa
  • 12 flour tortillas
  • 2 cans enchilada sauce (or even better, make your own enchilada sauce)
  • 2 cups of shredded cheese (Colby Jack, Cheddar…your choice)

Directions

Chop the onions and mix them with the refried beans.

Add the salsa to the mixture and then spread it onto some 6-inch flour totillas. Roll and place the tortillas seam down in a casserole dish.

Cover everything with a couple cans of enchilada sauce and top that with some shredded cheese.

Bake it at 350 degrees for about 20-25 minutes.

Variation on the filling:

If you don't want to do straight refried beans for the filling, you can try these variations, either of which can be mixed into the refried beans if desired.

  • Ground beef. Brown ground beef with chopped onions. Add taco seasoning and water (2 TB taco seasoning and 1/2 cup water per pound of ground beef) and simmer for 10 minutes before spooning into the tortillas. Put a spoonful of beans on each tortilla before adding the ground beef to the burrito.
  • Chicken. Put chicken breasts in a slow cooker and top with salsa. Cook until chicken is done and then remove the chicken and shred with two forks. Return chicken to the pot and mix together with the salsa. Put a spoonful of beans on each tortilla before adding the shredded chicken to the burrito.

I don't have any meals planned for the weekend, so we'll be Yo-Yoing until Monday. I'll still make breakfast for everyone (cinnamon rolls tomorrow!) but lunches and dinners will be on our own.

We'll be pretty busy tomorrow with rearranging the "red" room and changing it officially into the "music" room since I finally sold my black piano. The buyers are picking it up at noon tomorrow, so all afternoon tomorrow I'll be moving bookcases and rearranging the furniture in the music room (I just love the sound of that—the "music" room!) to accommodate the Baldwin for piano lessons. As usual I'll post pictures of the room makeover once it's completed.
