The Breakfast Challenge: Day Two

This morning I made an oven omelet, a recipe I've never made before. The ingredients were few (just eggs, milk, and cheese…and deli ham for me), the prep was quick and easy, and I especially love that I didn't have to stand over a pan making sure the eggs didn't burn.

I wanted ham in the omelet, but I knew my kids wouldn't, so I chopped up about 6 slices of deli ham and sprinkled it over half the omelet before putting it in the oven to bake. The omelet took 10 minutes longer to bake than I had expected, a total of 30 minutes, but the wait was worth it. It was delicious, especially the crusty edges. My husband and the girls loved it too, so I'll definitely be making this again.

Jaden again opted out of the hot breakfast, choosing cereal instead. But although he didn't eat the oven omelet, he did give it a new, and properly descriptive name — Scrambled Egg Cake. I like the name, so I think that's what we'll call it from now on.

Jaden won't be having cereal tomorrow morning because chocolate buttermilk muffins are on the menu, and he loves those! I'll probably be doubling the recipe and freezing the leftovers so I can pig out on them later this week.
