Mmmm! Chocolate Chip Muffins and a Good Rib Rub

We managed to grill pork ribs this evening. We've never attempted it before, but I picked up a package of boneless pork ribs for super cheap a few weeks ago, and since I'm trying to use what I have on hand this week, we went ahead and gave it a shot. And they actually turned out great.

Now I say that, but I do have to add a caveat. Jeff loved them, and so did the kids, but I have this thing with eating visible fat—such as one finds in abundance on pork ribs. I just can't do it. So I ate baked beans instead. They were yummy…ish.

The ribs were pretty easy to make (if you don't count the struggle with the grill burners that insisted on going out repeatedly throughout the grilling process). All Jeff had to do was 1) find a recipe for a rib rub; 2) slap it on the ribs—the rub, not the recipe; and 3) grill them—the ribs, not the rub and the recipe—for about 45 minutes.

The rub definitely had a kick to it. We might experiment with the recipe for the rib rub a little bit, but it was still really good as it was (or so I'm told.) Here's the recipe we used that worked for us on this first attempt at pork ribs!

Kansas City Rib Rub

1/2 cup brown sugar

1/4 cup paprika

1 T black pepper

1 T salt

1 T chili powder

1 T garlic powder

1 T onion powder

1 tsp cayenne

Mix all the ingredients together and rub generously onto the meat.

By the way, does anyone have a favorite recipe for great-tasting chocolate chip muffins? They're on my menu this week, but I don't have a tried-and-true recipe yet! HELP!
